SAMOSA FILLING - VEGETARIAN



Ingredients

Carrots, grated - 1/2 cup
Beans, thinly sliced - 1/2 cup
Potatoes, grated - 1/2 cup
Onions, thinly sliced - 1/2 cup
Ginger, finely chopped - 1/2 tbsp
Thai red chili, finely chopped - 1 (may use any other chili)
Coriander leaves, chopped - a few sprigs
Salt - 1/2 tsp
Pepper - 1/2 tsp
Garam masala - 1/2 tsp
Oil - 1 tbsp


Heat pan, and add oil. Next, add onions, ginger and chili. Fry for a minute, taking care not to brown onions.


Add carrots, beans and potatoes, and salt and pepper. Stir fry, till vegetables are cooked through but still crisp. Adjust heat so that vegetables and onions do not brown.


Transfer mixture to bowl. 


Leave to cool. Then add chopped coriander leaves and garam masala.
