SAMOSA FILLING - CHICKEN

 


Ingredients

Onions, sliced - 1 cup
Chicken, boiled and shredded - 1 cup
Thai red chili, finely chopped - 2 (may use any other chili)
Ginger, finely chopped - 1/2 tbsp
Salt - 1/2 tsp
Turmeric - 1/8 tsp
Coriander powder - 1/2 tsp (alternately, reduce chili to 1 and substitute coriander powder with Kashmiri chili powder for a different flavour and appearance)
Coriander leaves, chopped - a few sprigs
Garam masala - 1/2 tsp
Oil - 1 tbsp


Heat pan, and add oil. Next, add onions, ginger and chilis. Fry for a minute, taking care not to brown onions.


Add salt, turmeric and coriander and stir in quickly so that spices cook, but do not burn.


Transfer mixture to bowl and stir in chicken. 



Leave to cool. Then add chopped coriander leaves and garam masala.
