I'm always looking for recipes to use overripe bananas. In my home, we buy too many bananas and never eat them all. Most of the time, they go into milk shakes or freshly baked banana bread, which is delicious with a glass of milk. But I get tired of the same old things, and trawl the net for new and different recipes.

The result was a beautiful, golden, banana fritter. A small dusting of icing sugar completed this delectable picture and the fritter tasted as divine as it looked.

I did not use 3 teaspoons of baking powder. I substituted the all purpose flour with self rising flour. Neither did I use a full quart of oil to fry these fritters. I used 1 to 1.5 cups of oil and shallow fried them, a few at a time in a small pan (the size that one might use to make a fried egg in). I waited till one side was done and flipped them over to cook the other side.
