CABBAGE MEZHUKKUPARATTI


From my friend Jaya, here comes another cabbage recipe.  A mezhukkuparatti is a Kerala style of preparation in which vegetables are stir fried with spices and onions.  

Ingredients

Cabbage - 4 cups, finely chopped
Oil - 2 tbsp
Onions - 2 cups, cut in slices
Green chillis - 3, chopped
Turmeric - 1/2 tsp
Salt to taste
Water - 1 cup

Finely chop cabbage.  You can cut the cabbage into chunks, place them in a food processor and pulse till finely chopped.



Slice the onions and chop the green chillis.


Heat the oil.  Add the onions and green chillis.  Sautee for a bit.  Add the turmeric powder.  Sautee some more. 


When the onions are glassy, add the cabbage.  Turn the heat up to high.  Mix the cabbage into the onions.  Add the cup of water and salt to taste.  Mix well.  Bring it to a boil.  Cover the pan.  Turn the heat down and cook till cabbage is done.  If water has not fully evaporated, take the lid off the pan and turn the heat to high.  Cook till dry.
